Abstract

This paper deals with the extraction and characterization of Syzygium cumini (Jamun) seed oil using petroleum ether as
solvent. The seeds were found to contain10% oil .The physicochemical characteristics like refractive index, specific gravity,
saponification value, Iodine value, acid number was determined. The extracted oil has saponification value 180 indicates
moderate cleansing ability. The high iodine value suggests that the oil is more susceptible towards atmospheric oxidation,
further confirmed by acid number.
